Vegetable Jars and Meat Jars Are Not Kept the Same

A vegetable pickle is held by salt, chilli and oil. In a dry house, away from the stove, avakaya, magaya, gongura and allam can stay in a cupboard. Open them briefly. The spoon must be dry. In heavy monsoon humidity, even these jars are safer in the fridge. Take out only the spoonful you will eat, so the cold oil is not travelling in and out all afternoon.
Chicken, mutton, royyala and chepala pachadi are different. After the first opening they go to the fridge the same day. Warm a few pieces in their own oil on a low flame if you want them less cold. Never add water. An opened meat pickle is for weeks, not for a year on the shelf the way a mango jar can be.
Do not use one spoon for both jars. The fish spoon in the avakaya is how a vegetarian jar stops being vegetarian, and how smells cross.
